Time to move on I reckon ..... Be Happy

After a week spent with my gracious and good hosts Michael and Rebekah, it's time to pull up stumps and head on down the road to check out my next adventures.

As a small token of my appreciation, I decided to put together a dinner menu befitting the lengths that these two young parents have gone to accommodate me in my one week stay, here in Dallas (Texas).

With Mike & Bekah's preference for seafood, tonight I put together an appetizer consisting of Butternut pumpkin soup with cajun spiced King prawns and scallops. The main course was a bed of parsnip and potato puree covered with a steamed Talapia fillet and Pinot Noir reduction accompanied with a baby spinach and watermelon salad with a balsamic vinegar & olive oil dressing.

All in all, not a bad menu, even if I do say so myself.

Tomorrow I'm joogin' on down the 240 miles (386 kilometres) South to Austin to hook up with one of my best mates - Dash.

Having Fitzy here was "fun". He is the best house guest we've had all year, even though he was the only house guest we've had this year.

Now that I have gained 10 pounds from his award winning cooking; he is ready to dump us and move on. I see how he operates. He fattens people and moves on. Apparently to be the skinniest of them all!!!

Although we understood only about 1/3 of what came out of his Australian mouth, the conversations were good and the experiences were cherished. We are hoping this will not be the last time we see Fitzy while he is on his Sabbatical.

We hope he knows our front door is always open for him (even though an attack dog and mace may be waiting - ha ha - sort of). We figure if we don't see him on our front door steps in the near future, we probably will see him while we are watching America's Most Wanted or Cops. He'll be capture #901.
